RECIPE: Veggie Pizza Pies
This is the start of an on-going project I have of getting kids to eat vegetables. It sounds like a daunting task but I am sure that with enough convincing and a whole lot of patience one can achieve this goal. I believe that there’s a veggie out there for every kid. For my little sister it’s string beans. My cousin it’s carrots. The best way to figure out which vegetables suits a kid best, try a whole bunch in a fun and exciting way. May I present to you my Veggie Pizza Pies.
You will need:
Pita bread
Tomato sauce
Pesto sauce (optional)
A variety of vegetables cut into shapes
cheese
baby spinach
strawberries
salad dressing
Cut pita bread rounds in half.
Spread tomato sauce and/or pesto sauce (kids like pesto if they don’t know it’s pesto) on pita breads. Chop, dice and slice your veggies into “face shapes” and have fun with it. I was limited to carrots, bell peppers, broccoli and onion that day but be creative and you’d be surprised what type of face you’ll come up with.
Pop the pizzas in the oven at 375 degrees Celcius for 8-10 minutes or until the cheese melts fully and the pitas are crisp. Let cool. Use baby spinach (or if that’s “too healthy” for your kid, use regular lettuce) as the hair for the pizza faces.
wOOt! Pizza faces. For a complete meal, use the spinach hair for a salad. Chop up a few strawberries and drizzle on some salad dressing (I used a homemade dressing: 1/4 olive oil, 1/4 cup of balsamic vinaigrette, 3 tsp of sugar and salt and pepper to taste)
